I would. Not only increases the size of the plums that you crop but also the quality of them too. Here's a YouTube video that might help..

We have two old plum trees, maybe 50 years old or more. This year our crop is at best mediocre but last year there were plenty. A few years ago the crop was exceptionally heavy and one branch actually broke off from the weight but otherwise it did no damage to the tree (which has a generous spread of branches) in the long term. I would think you could simply see what happens and not worry too much - but our perennial problem is overproduction and we end up asking people to take some plums with them.
I would say, yes thinning them out will benefit your harvest.
If they are in tight clusters, then thinning them out should, improve the size of the ones that are left to mature, allow air circulation around the fruits, to prevent diseases spreading and also avoid the risk of the branches breaking under the weight.
