I'm presently doing the above. When planting the beans into pots, do I put the shoot to the top or bottom of the pot? Or doesn't it matter?

The shoot is probably the root, so plant it at the bottm. It probably doesn't matter; the root will find its own way down.
A far as I can tell it doesn't matter. Same goes for Peas and Broad Beans. The roots always go down and the Leaves come up. They even sometimes push the legume husk out of the soil. I am in a quandary here. My Broad Beans and Peas are well ready to go out but the wind and rain is heading this way so I have to hang fire for putting them out. The danger is that they become rootbound and bolt/"go leggy" before it is fit to put them in the ground.
Put them end on and they're less likely to rot
Not flat!
