If I have the time whiz up excess bread, put a thin layer on a large baking tray and dry them off thoroughly before putting in a large plastic container. Much better than the gaudy orange stuff from the supermarket - and it keeps forever.
Instant stuffing: Fresh bread whizzed up, add fresh parsley, thyme and a bit of sage, whizz again. then freeze. When needed add lemon or orange rind, knob of butter, put in buttered dish - or stuff whatever beast you have and cook.
