We have a mahogany bath panel. Would it be possible to paint it (I would like it white) and varnish it? Would that be enough protection for it?

Just rub it down well with a medium sandpaper to remove the finish that is there and provide a key, wash it off to remove dust, apply one coat of primer, then one undercoat and finish with a gloss coat. Use reasonable quality paint. You do not have to varnish, it will probably be best without.
