Woodworking joints

When making joints in woodwork, eg. a mortice and tenon joint, is it recommended that the joint should be as tight a fit as possible or should there be a small amount of movement? This may sound like a stupid question, but if it's a supertight fit won't the glue scrape off the surfaces as you force it into place... then cause a surplus of glue in the bed of the joint which prevents a snug fit?
