They would not explode or anything. I think you have to buy a good make as the cheaper they are the more unreliable they are and they will slowly inflate again.
When I moved house recently I used a couple of the local council recycling bags (just like bin bags which or water tight - no holes) I then put my clothes in squeezed all the air out and then tied them up tight. They stayed deflated and still are.
The only problem with all of these is that the items inside do get a little creased so you would need an iron on holiday to sort that. The JML ones I have used worked well and had a 'travel' sized pouch specificately named so you should be fine traveling with them.
If you are goin on a flight though don't put any electricals in them as if customs want a look they will open it reinflating the pouch and then u would be stuck as once inflated it would not fit back inside your suitcase.
