Any suggestions why we might be getting hot water everywhere but the bath, where it runs cold after 10-15 seconds?

I would try to run the hot water tap slower so the the water can heat properly in the system before it reaches the bath.
I had cold-ish water for so long the thermostat on the boiler also changed so that it thought that was the temperature it was supposed to be heated to ??
Also try restarting the boiler there should be a button somewhere give that ago.
Find the manual for the boiler.

When did you last have your boiler serviced? This happened to me recently. My boiler was running at reduced power (because the wrong outlet stack had been fitted) but was only evident because we had the radiators on as well. Not saying your boiler has a problem or anything, but it might be worth having it checked out.
