Cordyline australis (cabbage tree) has flowerd, petals have now gone to seed, do i leave alone or cut off?

either, your choice. I would remove it before the winter by cutting it off at the base of the stem just in case it rotted down to the crown of the plant.

Yes, cut it down and let it dry out in the sun away from rain.

I leave mine, till Autumn, the birds enjoy the seeds, and then I cut it off...................
