I can see the + & switch them off, but there are a few with no box or + at all, that i'd like to switch on

You can’t switch them on and off. Clicking on the plus signs gives access to sub- categories.

The + indicates there are sub-categories under some headings. We cannot change that.

As others have indicated, clicking on a '+' button doesn't turn anything on or off; it simply expands the menu list, so that you can see which sub-categories are also available.
