I am sat here in Southampton and was wondering, why don't the boats fall over in the mud when the tide goes out?

Tis indeed TW. If the mud was solid the boats would fall over but as it's soft and the tide goes out slowly the boats sink in slowly and sit at a pretty angle for all the artists to come along and paint

There are also things called 'bilge keels'. If you imagine that the cross section of a hull is semi circular, these run for part of the length of the hull at the 5 and 7 o clock positions, and stop the boat rolling over as it settles.
