Proof of postage is not necessarily proof of receipt. Is a copy of a 'Sent' e-mail proof it has been receieved by the Third Party?

I would say not because you can easily send it to yourself and alter the receipient before printing the mail, but in Outlook (express) under Options there is a Receipts tab which will give you the option of requesting a receipt.
