There may be many different designs in use but in general the trigger by way of some magnifying mechanism will increase pressure in the water chamber which forces the water out of the barrel.

Others, such as the big blaster types have a pump to increase the pressure in the water chamber, in which case the trigger opens up the chamber to allow the water to gush out.
