I'd advise against pub management or pub consultancy as they are closing down at a rate of 52 a week.

Are you happy in your job. Is there something that you would like to do in a totally different field? If there is, then perhaps you could start to do some studying while still being employed in your current job. It depends on what are your interests. I had a a hobby that went a bit over the top and ended up being a wonderful sideline. Only wish I had gone down that road when a bit younger.

In the meantime get in touch with the local training college and see if you can be a visiting tutor. Maybe this will lead to some teaching or consultancy etc. Be careful to remember how you'd feel if an outsider was brought in to advise you on gp etc. and make sure you deliver any support in a positive manner if you do get into that side of things.
good luck in whatever you do
