I got an interview tomorrow in a new shop opening which is meant to be on 9th. I need to give 2 weeks notice to selco so what do I say?

You couldn't have been doing a good enough job, employers simply can't carry passengers, pay people for work they're not doing. I know the company then had cutbacks, no overtime etc after that, but it was the same scenario that you'd had in the care home and the cleaning firm .
The thing is, Abbey, not telling the truth is making things very difficult for you....for example, your mum doesn't know you're only working 10 hours a week, so what are you telling her to explain how you're managing to afford your social life/nails/tans/new clothes/phone/Disney and paying your keep?
