If you went for a job and told them that you were earning more in your current/previous job then you actually were, would they find out at any stage what your actual salary was?

Your P45 will state your total earnings, in the current tax year, up to the date when you left your old employment.

Oh of course. Forgot about that. Thanks for the answer!
Doesn't mean that anyone will actually put the two bits of information together and notice the discrepancy - the clerk in the payroll department who is probably going to be the only person who actually looks at your P45 isn't really going to be interested - but it's unwise to lie when applying for any job.
