Night allowance

I have an employee who occasionally sleeps over in my small hotel when we have guests. She is insisting on a rate of £3/hour - is this right?
For example, Last week we had just one guest in at a rate of £55. After deductions of VAT, commission to late rooms, laundry, chambermaid, toiletries etc. etc & her allowance of £18 (2am-8am) plus a further £5.80 to put a tray together for the guest & wait for him to check out we ended up with the grand sum of £3.32!!!
This surely can't be right! Can I just give a flat rate of say £10 which would then make things easier on us financially. To be frank, if she is right we may as well close!!!
