Eternal Power Of Attorney
I wont both my son & daughter to act for me under EPT. 1. Is this possible or must it only be one person? 2, If so, would both of them have to sign documents should the need arise or would just one suffice? 3. Can this be done other than through a solicitor?

Use 237SJ's link and do it yourself. You can do it in dribs and drabs and keep saving it until you've completed it; only then do you need to send any money to get it authorised, so it's worth trying to do it yourself as it will save a lot of money. It's very flexible, as THECORBYLOON says eg, we have our only daughter as a single attorney with her two sons as joint attorneys if she is unavailable.
New EPAs (ENDURING power of attorney) have not been able to be set up since 2007, but have been replaced by LPA, which comes in two flavours - health and welfare and property and affairs.. you can set it up however u want, with them acting together, separately or a mixture. As above, you can do it yourself. You do have to get a certificate giver (someone who certifies you are not acting under duress) and you might have to pay for that depending on who gives it. You also have to pay to register them with the COP unless you are on certain benefits
