When your ipod is connected, right click on Ipod in the source column on the left in itunes. This should give you ipod options - if it is set to automatically update all songs and playlists, it should delete tracks when you clear them from itunes. Just deleting them from playlists will not remove them from the library, you need to right click in library, and select "clear".
