Is there a name for that squeaking noise guitar strings sometimes make whilst being played? And, no, I'm not talking about the music!

well if your talking about acoustic guitar it's called either finger or string squeak but if you mean on an electric guitar then it's called a pick scrape if it's deliberate though you can by string nowadays that are coated to prolong string life and cut down squeak.
