This is going to flag up a whole host of different names i suspect as there are so many different Dj's and styles out there!
Right here goes!
My favourite (although i like loads!) DJ is John Digweed for possibly being the finest technical dance DJ that i have ever seen
Others that are pretty damm good too are : Sasha, Scott Bond , Above & Beyond, Murk , Trentmoller , Black Strobe , Cass & Slide , Danny Tenaglia , Danny Rampling , Jose Padilla , BT , Coldcut , Mr Oakenfolds earlier stuff ! To be honest there are loads and the list could go on and on and i suspect i have already forgotton some other faves of mine!
As for an altime Favourite Tune that is near on impossible but i would say at a push Choice - Acid Eiffel possibly the best track ever made using a 303! Looking forward to seeing what other people put! Good Question!!

i forgot rampling!!!!! top dj.....loads of chunes but if push came 2 shove id plump 4......31 seconds(long dark tunnel)....abit commercial now but back in the day different gear!!!!! glad u liked my question

Norman Jay....although seem to remember a bit of a messy night at The End once when not only Mr Jay, but LTJ Bukem & MC Conrad played - awesome!!! Oh, 2 Many DJ's live are pretty hard to beat as well. Fave choon??
