In the interest of diversity, why are there no benefit scroungers chosen from ethnic minorities, so as to be portrayed in these kind of documentaries?

Whilst you're a there, have a look at 'Can't Pay, We'll Take It Away'. This show will also prove that these shows don't operate the imagined colour bar that you've dreamt up.
Seriously...I'm surprised you didn't do a little research before asking such a flawed question.
I assume you must have an admirably good taste in telly, which would explain why you don't watch Channel Five (although if you'd seen Benefits Street on CH4, you'd also find that the participants were from a mix of races).

//
perhaps the makers of the show do not want to show ethnics as they may think it will reinforce racism
//
Well, everything is PR, when it comes down to it. Articles which, in summary, say "look, everyone: ethnic people caught doing something bad" are meat and bones, to people in some quarters, seemingly with some axe to grind.
// or there being politically correct //
In a way, it began as correctness in the shameless pursuit of votes but it has extended to also mean the pursuit of viewer ratings or sales figures, or not getting sued to pieces or not to provoke painful payback.
Relentlessly trotting out stories of badness and not balancing it with good stuff done by minorities is, at the very minimum, unbalanced and, at worst, propoganda, demonisation, as per 1930s Germany.
Political correctness sometimes strikes me as an over-earnest attempt to avoid being accused of being a Nazi. It is the degree of overshoot which seems to get AOG's goat, so often. "Special treatment" and so forth.
Maybe we should all try role-playing a person who is a teeny-weeny bit waycist but customer-faces with lots of minority folk and is trying not to get caught in the act, on an hourly basis. That's gotta hurt!

Hypnosis
What has that got to do with this question?
AOG asked, "why are there no benefit scroungers chosen from ethnic minorities?"
That's simply not true.
I assume that like AOG, you have the good taste not to watch these shows. If you did, you'd know how utterly false that preposition is.
In fact, the programme Can't Pay, We'll Take It Away predominantly features non-white participants.
I can say this in all honesty because I have no shame and will watch these shows.

Actually, it was this:
"I wouldn't want black people living next to me, because I don't like loud music and noisy barbecues".
I challenged him on that assertion.
I didn't get a reply.
But then again - you might be referring to another thread. I am not sure exactly how many times AOG has expressed his feelings on the possibility of black neighbours.

We had a holiday caravan just a mile or so from Jaywick so I know it well.
There are very few if any 'non white' residents.
The majority of the homes are 'self build' originally intended as holiday chalets but a lot of the owners decided to move there permanently.
The house prices are nearly the lowest in the UK which is why they are mainly inhabited by people on pensions, low incomes or benefits. Few can afford to up grade or repair the homes.
