Has she done more than delay the Brexit proceedings by convincing the judges that something the House had already agreed had to be re-agreed ? That's influence of a sort, not the good sort, but surely there must be more to get a mention in the list ?
Since the list is one of folk with African/African-Caribbean family roots I would imagine she has African ancestors. British Guyana is part of the British West Indies so she wouldn't personally be African nor Asian, but it is conceivable that ancestors further back in time, were African and ended up in the West Indies.
Since a popular theory is that humankind came out of Africa, aren't we all of African heritage ?

// Her father and Mother's surname are Singh doesn't that make them Indian Sikhs? //
No. Her parents were born in British Guyana, so they might be British Sihks. They have a Sikh name but that does not necessarily mean they still are Sikhs, not everyone with a christian name is christian etc.
Lots of parts of the British Empire were colonised by subjects from other parts of it. For example, there are lots of Indian Asians in former Empire countries in Africa.
