They frighten my dogs, and I normally stamp on them if they get anywhere near me but can I use a catapult to shoot these down?

Wouldn't damaging someone else's property just for the hell of it be deemed a criminal offence ?

.. and then you have got to remember a lot of drones carry cameras recording what they see. If the last thing the camera recorded was you stamping on it ... sorry definitely guilty of malicious damage !
