Trade deals need not place limits on sovereignty. It a different situation to agree something specific, voluntarily, at the time, compared to agreeing to be dictated to and obliged to comply every time the other party decides something in the future. The problem with the EU was always with the federal control, not the trade related agreements, as a general rule. Trade agreements should be revisitable too, should some immoral, unacceptable "gotcha" be uncovered afterwards. Agreements should be accepted mutually by all the parties concerned.
Trade deals are about much more than the price of fish and can, and will, mean lots of things that will get the sovereignty crowd up in arms.

Whether they are allowed to trade is in part regulated by the Governments of the two countries. The tariffs applied are regulated by the two countries. Rules that ease tariffs are set when the two countries agree (and then they have to agree on what those rules are). Businesses anyway are obliged to operate within the laws of their countries. (Whether they actually do in practice is beside the pount; they are, at least, supposed to).
So of course sovereignty is involved, and of course, therefore, you are entirely wrong. The very reason a trade deal existed and was seen as necessary shows how mistaken you are.

Trade agreements struck between countries are always political, especially if one party is more powerful than the other. It is astounding that Brexiters refuse to believe in such an obvious truth - just admit that you got it wrong and misunderstood the modern world and perhaps we can begin to fix this ghastly mess.
