They may foretell the future, predict your love destiny, tell you about your chances of finding wealth/poverty and so forth. In olden times an animal might be sacrificed so that a soothsayer could examine its entrails in order to see whether this was a propitious time for some activity or not. More recently, a girl plucking petals from a flower and reciting: "He loves me, he loves me not" is hoping to find that he does. Someone who reads a horoscope in the newspaper is hoping to learn what good things may befall him/her today and so on.
It's all nonsense, of course. Entrails, petals and stars have no impact whatsoever on what happens to us, but it comforts some people to believe that they do. In answer to your question, these objects are just seized on as a "channel", for want of a better word, between the person and fate.
