Where does the phrase: I'm going for a Pee (i.e. I'm going to the toilet) come from?

Presumably, as it's a shortened and polite way of saying, "I'm going for a p155".
<b>Tom</b> is exactly right. The spelling 'pee' is just a representation of the letter 'P', that being the opening of the - nowadays crude - 4-letter word. It was introduced at the tail end of the (supposedly) prudish Victorian days to avoid offending delicate sensibilities.
