Half of the clues are Definition and Letter-Mixture, in which a sentence containing the definition of the answer also contains a mixture of the letters of the
required entry. In the other half of the clues, wordplay yields an extra letter.
12 down (extra letter N) Put most of drink in vat (6) STATE?
34 across (extra letter P) Jock's trimmed and cut the hair of son at the front after vacation (7) SN?DD?D (is it snOdded or snEdded?) An explanation of the wordplay would be great!
With the 'person' do I eliminate all of him or just his top (head) ?

12dn STATED - most of TE(a) in STAN(d) = 'vat' [def is 'put' past tense]
34 extra is D [P is the next answer] - 'cut hair' = (d)ODDED following S(o)N 'after vacation' = SNODDED (def 'trimmed').
His head was already off from the entry to the adjacent across clue, so remove both of his names entirely Ripper (I think).
...sorry, I bracketed the wrong letter in 12dn - should be STA(n)D.
