I live in England. When I am asked on surveys and petitions on the internet I am given the option of    United Kingdom or Great Britain as place of residence. Which is the correct term

Both are correct for you. The UK counts as England, Scotland, Wales and Northern Ireland, whereas Great Britain is the largest of the British Isles (i.e. the big one that is made up of mainland England, mainland Scotland and mainland Wales).
I thought United Kingdom also included random islands all over the world??
and Britain and the UK mean the same thing.
Northern Ireland is not part of Great Britain but it is part of the UK.

Great Britain is the largest island in Europe.  It is a collective name for England, Scotland and Wales.  It includes small adjacent islands but NOT the Channel Islands or Isle of Man.

The United Kingdom is made up of Great Britain and Northern Ireland.  The Isle of Man and the Bailiwicks of Jersey and Guernsey are NOT part of Great Britain or The European Union.

The British Isles is Geological, not Political.  The British Isles consist of Great Britain, the whole of Ireland, the Orkneys and Shetlands, Isle of Man, Inner and Outer Hebrides, Isle of Wight, Scilly Isles, Lundy, the Channel Islands and many other smaller islands.
