I have heard of the 49th Parallel (between the USA and Canada) and the one separating North and South Korea, but where are the others?

Pretty well everywhere! 'Parallel' in this sense just means 'line of latitude', based on the fact that the borders concerned run along or relatively near to a particular such line. So, 49 degrees north - "the 49th parallel" - is roughly where you will find a large stretch of the USA/Canada border.
