How did he bend spoons? I've seen it called a trick, but I've never seen a convincing explanation of how the 'trick' is done.

Or, to put it more simply: he bends them by bending them. If he were really able to bend things by menatl powers alone, he would just get someone to put them on the table and keep his own hands well away.
