Upgrading Memory: 2X 1Gb -> 2X 2Gb

I have a laptop with two S0DIMM slots, each with a 1GB DDR2 800 (PC2 6400) SDRAM card. According to the handbook, the laptop supports dual-channel memory. It also states that I can upgrade to 2x 2GB. Whooppee. I am unsure what salient points I should look for, when seeking replacement RAM for upgrading. Is the dual-channel memory feature important? (The 'PC2 6400' was marked on the memory cards - but do not know what it means.)
Any assistance in a successful purchase would be appreciated.
