using a pc as a router to log internet activity

I have a spare Windows XP computer with two network cards and want to connect one card to the internet (my broadband router) and the other card to my local network (via my switch) in order to run some sort of logging software that will allow me to see what my kids are browsing, emailing etc. I am familiar with windows XP bridging and also setting up proxy servers but as of yet cannot find any software that will allow the network traffic to be cached, logged or viewed. Any ideas?

Do it properly (ie not with windows), you set up a caching web proxy, if you don't run it in transparent mode then the kids will require a login to use the internet and you can easily restrict times and content they view.

Emailing is a tricky one though, it's hard to log web based email, you can easily copy all mails to another account if you use the above box as a mail filter for server based email.
