Iphone Jailbreak and Unlock

Hello,

was just wondering if anyone could help me Jailbreak and unlock my Iphone. I have just inherited an Iphone from my sister which i have revived and got working (was water damaged) and would love it if someone could tell me which of the following i need...

Itunes, which version do i need?
iOS, do i need version 4.2.1 or version 4.1?
Redsn0w or Greenpoison? and which version?

The phone is a 3G and its a 4.2.1 model. Have heard i may need to roll this back to 4.1 in order to sim unlock this phone. Can anyone confirm this or make any recommendations to me as to which versions of things i should be downloading/installing as i've been researching for a while now and its a bit complicated for a first timer. Any help greately appreciated.

As far as iTunes is concerned, you will get the latest version whenever you download it.
