When I try to type someone's home address in separate lines under each other in the body of an e-mail it types it in double-line spacing because it thinks I'm beginning a new paragraph each time.
Is there any way I can customise the icons or, at least, fool it into typing in single-line spacing?

When you're typing an email there's probably the name of the program which you're using (such as Outlook Express) across the top of the page. Alternatively, if there's a 'Help' button at the top of the page it should be there under Help > About . . . It's the name of that program which we need to know. (I'm using a computer with Windows 7 Professional and it didn't come with any email program on it, so I'm unsure as to which one you're using).

While you're looking, I'll take a gues that you're using Outlook (that's the program of that name, not the email service which some idiot at Microsoft gave the same name to!) or Outlook Express.
A bit of Googling suggests that pressing Shift at the same time as Enrter might resolve the problem. Otherwise try the following as a more permanent measure:
Create a New Email Message, put your cursor in the body area
Click the Format Text Ribbon
Right-Click the "Normal" Style
Click Modify...
Click Format (in the bottom left)
Click Paragraph...
On the Indents and Spacing Tab, in the Spacing section, turn ON "Don't add space between paragraphs of the same style"
Click OK (only once)
While still in the Modify Style window, click the radio button for "New documents based on this template" (near the bottom left)
Click OK
