Have you deleted it on your phone or on you SIM or both?
Anyone can type in the 'phone number from your mobile 'phone, regardless of whether it's stored on the 'phone or the SIM-card.
Do you mean someone else could type in and dial the number on her phone, the corbeyloon, or are you talking about someone spoofing the callers number
Yes, it's possible. On most mobiles, you can see the calls you recently made. On iPhone or Android, open the Phone app then select "Recents".
Someone could have access to the 'phone and type in the number or spoof the number so that the real number from which the call is made is replaced by a chosen number.
I think its more likely that galasalmon (or someone else) has accidentally redialled a previously dialled number even if its not listed in the contacts no more.

She did answer but could only hear paper rustling ,don’t know how as I hadn’t even made the call ,
Given that cold-callers can make it look like their call comes from any number they choose, it's always possible that a cold-caller just happened to chose your number as his disguise. Very slim chance but it could happen.
