When I put Service Pack 2 on my computer it causes a number of problems eg. my scanner will not work.

A local shop said to take it off which I did and can now use my scanner again.

Will not having SP2 on my computer cause me any problems in the future?

I suspect the problem is not SP2, but more likely that the driver for your scanner is not supported/recognised by the upgrade, try looking on the manufactures website for a new driver.
Is it a USB scanner? Have you tried any other USB devices? It's common for there to be USB problems after installing SP2. As it is still XP, I wouldn't have thought that it was a driver problem but, as Memesis9 says, it is worth checking the web site. If it is a USB problem, I would suggest going into your System Properties/Hardware and then uninstalling/deleting all the USB devices then restart and let Windows find them again - it worked for me.

Yes, you will not be able to get security or other updates from MS.

they're a nightmare with XP SP2
I have a scan jet and I have no problems with service pack 2
you're one of the lucky ones ...
I'd go to the printer manufacturer's website and see if they have any drivers that are specifically for PCs with SP2 on as has been suggested here.
