In your new message window go to tool/select recipients... highlight the contact (if you hold down Ctrl, you can select more than one at the same time) and then click your preferred mode of sending.

In Outlook: New mail > view > Bcc field. In Outlook Express: Create mail > view > all headers (which should add BCC)
