The Dell Latitude CPi A366XT has an AGP chip next to the memory but its only a 2.5 megabite memory for the graphics. Does anyone know if this chip can be replaced with a larger memory version?

Were you thinking of unsoldering then resoldering a VRAM chip to the mainboard? Even VRAM chips that you can replace out are difficult to source. I would say the best thing to get is a PCI video card in order to improve your graphics (or, better still, an AGP card if the mainboard has an AGP slot).
Oh, its a laptop: no chance then, sorry.
