How do I edit my e-mail (font size, colour etc) and be able to add "stationery", background colour etc.

I was able to do all of these when using Outlook Express, but no longer can when I changed by ISP to
Sky Broadband.

Web-based email services frequently don't provide the flexibility that using a proper email client (such as Outlook Express) does. Unless you need to access your mail from other computers, you'd be well-advised to go back to using Outlook Express. (There's absolutely no need to use Sky's web portal to send and receive your mail, although you could still do so if you wanted to). Instructions for setting up Outlook Express with Sky Mail are here:

I don't know about Sky, but I've noticed that some people who have set up their web based mail to be forwarded to their Outlook (Express) omit to ensure that once the forwarded messages are sent, they are deleted from the web mail.

This has resulted in their web based Inbox filling up to the maximum in a very short time, eventually the ISP will reject all mail as the allocation has been reached.
Chris's link does not result in forwarding to Outlook Express. It is how to configure OE to collect the e-mails direct. By default OE deletes the messages when it collects them, but this behaviour is user-configurable.
On the advanced tab of the account properties, ensure that the "Leave a copy of messages on server" is unchecked.
