can scaffolding interfere with my satellite signal, if so why?

Errr, as for why....

Does a brick wall interfere with your views if you stand behind one? well it's the same reason.
Absorbtion,disruption and scattering of signal.

Your dish needs a direct line of site to the satelitte in the sky.

If this direct line of site is broken, by anything, then the signal will be degraded, or lost completely.

This can be caused by a tree, or scaffolding, or other object, and can even be caused by heavy rain or snow (most of us have had signal break up during heavy rain).
