I am hoping to take my Grandaughter to Spain or Portugal next year just the 2 of us, can anyone recommend holiday companies that are not to sky high with their pricing tia

I tend to do Easyjet holidays these days and if you cancel, you get all your money back (the Deposit is refunded as Easyjet credit). You can change your mind / cancel as many times as you like and the credit will just go back into your account and you can use it when you book your next holiday.
They're a lot cheaper on the whole and I've never had a bad Easyjet Holidays experience.

I can recommend Mercury Holidays, who seem to negotiate very good deals with hotels (especially out of season), including flights & transfers.
I’ve also used Expedia to put together my own itinerary – but you have to arrange your own transfers to/from the destination resort.
It’s worth checking direct with your chosen hotel, what they would charge for your stay – I’ve found that by booking direct with the hotel, I got breakfast thrown in for a very similar fee. You could also book the flights direct with the airline, that might work out cheaper.
