I am introducing a friend to Thailand, my wife is a diabetic and we have had no problem with Thai food. I am however worried that my friend who cannot eat anything with the slightest trace of wheat/barley etc in the food will have a problem. My question therefore is what are the Thai word/words for GLUTEN FREE?

Pare (allergy) ah-han (inside body) Tanya Peu-rch (cereal crops) is the closest I can get to. Swallow the r in Peu-rch
There are couple of links to international hospitals below. I suggest one of the first things your friend does is go there and get a sign in Thai they can show at restraunts. A doctor would charge 300-400 Baht for a visit and if you go to Bumgungrad there is a superb Italian place to eat.
Your friend still needs to be extremely careful as a lot of kitchens will not wipe down between preparation of different dishes.
