We've been a couple of times and had excellent holidays on both occasions. Resorts and hotels - depends what you like, really. Sousse is a largish town with hotels on the outskirts; Port-el-Kantoui is a pupose built imitation Mediterranean port with the usual tacky souvenir shops and overpriced continental cafe-style restaurants. Hammamet is a more traditional town , again with its hotels on the outskirts. There is a new(ish) hotel development called Yasmeen Hammamet that is typical of Mediterranean tourist development areas if that's what you want. Both Hammamet & Sousse have lovely beaches. Our best fortnight without a doubt was at the Phoenicia Hotel in Hammamet. Things to do - the 2-day Sahara trip is good, and some of the Roman remains are stunning (again, if that's what you're into) - visit the El Djem Colosseum-style arena and the Roman city of Dougga. Tunis is a typical commercial city, but worth going to for the Bardo museum; the remains of Carthage are a bit spread out and piecemeal, but public transport between them is easy and cheap. You may well visit the picture-postcard village of Sidi-bou-Said; if you do, a little-known (or at least it was) musuem there is the Arabic-Mediterranean music museum - when we went we its only visitors.
