Going to Utah later this year. I've been once before and explored Zion and Bryce National Parks.
Any recommendations for places to visit in Southern Utah?

actually, I've just spotted that line saying 'the museum is currently without a home'. So you might want to disregard the suggestion completely!

(It's 20 years since I saw it, and it had a home then.)

In terms of National Parks, you could knock-off Capitol Reef, Canyonlands and Arches. Been to the first two, not the third. They are big spaces, not the tight complexity of Zion or Bryce. Arches is supposed to be really good but it too far for us. The drive down from Hanksville south to cross the river at Mexican Hat was pretty good.
As you know this is a remote under-populated area of the USA, economically and transport limited substantially by the impact of few river crossing points on the Colorado.
Personally I reckon the Native Amercian Indian sttlements of the Navejo just over the border in N Arizona give that area much more to offer.

Southern Utah is a land all to itself... seperate in many ways from Salt lake City area. St. George is a good place to stay and see the area from. It's only about a 2 hour drive through majestic Virgin River Gorge.
St. George (population about 100,000) has a great desert climate most of the year. It does get hot in mid-summer, but evenings cool off quickly.

Search out small towns like Kayenta for artsy folks and things to see and, of course you can access the North Rim of the Grand Canyon easily from there... about 1.5 hours driving time. Lots of other things to see and do.

We love that part of the US, Arches is well worth a visit, it's huge, do the walk across to the Delicate Arch, a wonderful sight. Moab itsepf has become a strip of motels etc but is the nearest to Arches. Further South, I'm never sure if it's in Arizona, is Monument Valley, again well worth a visit, try and get there for sundown.

My wife and I went to Goblin Valley once and had a brilliant time, mind you cannot remember whether that is in southern Utah or northen Arizona

I went to Sundance Ranch (Robert Redford's place where they hold the indie film festival). Very nice, mountain biked down the hill (you can ski in winter) and had lunch there.
