I seem to remember that you're 'north of the border', Poodi. easyJet and Ryanair both fly to Krakow from Edinburgh.
Wrocław seems to be gaining a positive reputation among visitors:

Ryanair fly to Wrocław from Prestwick.

I'd go for three or four nights in Gdansk on the north coast - wonderful Old Town, tons of history spanning many centuries and cracking restaurants and bars. It's also very easy to reach the seaside town of Sopot (15 mins by train) and the medevial castle at Malbork is a great day out (60 - 70 mins by train). Enjoy!
