When I went for a couple of days I went on a canal cruise. I know that sounds a bit boring but it actually turned out to be quite fun and a very good way to go sightseeing. The best time to go on a canal cruise is a night because all of the tunnels are lit up. When we finished our canal cruise we went to a chinese restaurant called Floating Sea Palace. This is a wonderful restaurant and I would definitley go there again. The meals are absolutely gorgeous and the restaurant itself is very well decorated.
At the night time if you want a good laugh, the red light district is a good place to go ;)
Hope that was helpful for you. Hope you have a good time.
I would try and have alook round the Rijksmuseum and/or the Van Gogh Museum - both of which are fantasic. Also jusk walk around the canals - the houses are beautiful - and the Jordaan area where there are some lovely little shops, cafes and buildings.
As for eating and drinking I would suggest a Spanish/tapas Restaurant called Duende (Lindengracht 62) which has a great atmosphere and serves fantastic food
