For more on marking an answer as the "Best Answer", please visit our FAQ.For Gawd's sake after tonight you'll forget all about bloody pumpkins so why try & get a recipe for something that tastes like crap & is grown purely so parents can carve a silly face in it & stick a candle up its jacksy. & no, I wont be handing sweets out to any snotty nosed brats dressed up in Asda witches hats who come begging on my doorstep, I'd rather give 'em a kick up the arse.
Oh & before you ask yes I do know a recipe for left over turkey. Chuck it in a saucepan & boil it in Homepride curry sauce. There, that's knackered your Christmas posts as well.
They're excellent roast. Big chunks round the beef or lamb with parsnips and tatties, basted with the meat juices -- yum!
Or roasted on their own, in chunks, dusted with chilli or paprika and cumin or other seeds.
Or baked and stuffed, like a marrow -- but very much better.
Chopped up in a stew -- put them in part-way through so they don't go too slushy.
Peel them first, as the outer skin can be woody. Wash and dry the seeds for planting, or bake them dry with some spices as a snack.
And don't wait for Hallowe'en! Grow them yourself and keep them into the winter. Go for the smaller varieties, as they have more flavour -- and they're often interesting shapes and colours and so make very decorative objects to sit on the windowsill until you get around to eating them.

A unique version of a yummy side dish, that is similar to a dessert, but hearty and healthy enough for a meal or snack!
Ingredients
1 cup Brown rice or couscous
1 t Butter
1 can Low-sodium chicken broth
1 cup Canned pumpkin
1/2 t Cinnamon
1/4 t Each nutmeg & cloves
1/4 c Onion minced
Preparation
Precook rice or couscous with butter. Season to taste. After rice cooks, stir in broth, pumpkin and spices and let come to a simmering boil. Reduce heat to low and let cook for 20-30 minutes. Add onion to taste.
