When I was on my own one night and fancied something tasty I did Tacos. Bought a box of taco shells and taco spices, fried up some mince and onions, chopped some lettuce, grated some cheese and filled my taco shells with all of that and some salsa. Also did a few potato wedges. A nice picky dinner that only took 15 minutes to throw together and went very well with a couple of glasses of wine! Alternatively make a nice pasta sauce using tinned tomatoes, creme fraiche and a variety of vegetables - tasty and healthy!
