Lets me say straight off, that unfinshed bottles of Champers are a very rare occurrence in Mikey Towers !
But people keep telling me to suspend a tea spoon in the neck of the bottle and the fizz will still be there the following day.
Now..... if this IS true, how does the science work ?

Sadly I can't do that any more and will enjoy my bottle, not magnum, over two nights. The fizzkeeper top suggested by Mamya and NJ works very well provided both the fizzkeeper and the bottle are decent ones. Some fizzkeepers don't have a proper spring mechanism and let the gas out and if the bottle doesn't have a well defined lip then the fizzkeeper will not remain in place and will go into orbit. After having a fizzkeeper blast off event in the fridge which was messy and exciting, I now leave the sealed bottle out on the kitchen worktop for a short period, less than a minute, to ensure that the seal is good.

A bottle of champers or prosecco or any other sparkling wine will easily keep from lunchtime one day till lunchtime the next day, in the fridge, and maintain its fizz. No need for spoons or any fancy stoppers. I've done this many times when I've opened a second bottle of fizz and not managed to drink it all.
