Winter weather calls for an homemade soup and last night I made enough minestrone soup to see me through the week!
My mum's recipe: diced carrots, courgettes and leeks, bacon cut up into little bits, a veggie stock cube, tinned toms, butter beans and kidney beans, and spaghetti broken up into 3cm bits (ish!). A glug of water and boil! DELISH!
My minestrone also has garlic, cut up fine green beans, basil and finely-shredded cabbage (added a few minutes before serving).
Serve, finished with pesto, olive oil and parmesan....and some sort of warmed Italian bread.
